Eggplant, Pesto and Goat Cheese Flat Bread

  Amount  Measure       Ingredient -- Preparation Method

  8        tablespoons    olive oil -- or more as needed

  1 1/2  pounds            eggplant -- pealed and cut into 1/4-inch slices

  1        teaspoon         salt

  4        pieces              flatbreads or Naan

  1/2     teaspoon         fresh-ground black pepper

  6        ounces             mild fresh goat cheese -- cut into slices

  1/2     cup                  grated Parmesan

  1/2     cup                  basil pesto


Heat the oven to 450°. In a large nonstick frying pan, heat 2 1/2 tablespoons of the oil over moderately high heat. Season the eggplant with the salt. Fry one-third of the eggplant, turning, until golden, about 10 minutes. Remove. Repeat in two more batches with the remaining oil, using more if needed, and the eggplant.

Meanwhile, lay out the flatbreads and spread pesto thinly over the surface of the crust.  Arrange the eggplant slices on the flatbreadst. Sprinkle pepper over the top. Put the slices of goat cheese on the flatbreads and sprinkle with the Parmesan. Bake until the cheese begins to turn golden, about 7 - 8 minutes. Cut and Serve


Celebrate the launch of the new Tampa Bay Slow Food Movement chapter Thursday, July 8, at a Slow Food Sampler reception at Studio @ 620 ( in downtown St. Petersburg.  

The event features a menu specially prepared by Chef Dave West of the Rolling Pin Kitchen Emporium of Brandon ( that includes apple walnut honey crostini, eggplant flat breads, Bloody Mary shrimp, diver scallops with pommegranate brown butter sauce and more, all made with foods donated by Whole Foods Market of Tampa (

In addition there will be information tables, many of the people who have been instrumental in getting the chapter organized (Tampa Bay marks Florida's 10th Slow Food Movement group), a silent auction for two tickets to the Aug. 25 Jack Johnson To the Sea Tampa concert dates( <> ) and dinner for two at Tampa's Pelagia Trattoria ( <> ) and other chances to win concert tickets.
