Sliced Tenderloin atop Toasted Baguette with Cabrales Crema and Balsamic Onions
Ingredients List:
10 oz Tenderloin
4 oz Cabrales Cheese
4 oz Sour Cream
1 Tablespoon Fresh Squeezed Lemon Juice
2 Medium Sweet Onions
2/3 c High Quality Balsamic Vinegar
Fresh High Quality Baguette
Fresh Basil
Fresh Ground Coriander
Olive Oil
Coarse Salt
White Pepper
Fresh Cracked Black Pepper
Balsamic Onions:
Slice Onions in half, slice halves in to thin half moon shape
Spread on a baking sheet and drizzle with Balsamic Vinegar and approx 2 oz Olive Oil
Season with Salt and Cracked Black Pepper
Cook in preheated oven (400 degrees) approx 30-35 minutes, until balsamic is reduced by half and the onions are caramelized
Remove from heat, set aside
Cabrales Creama:
Puree Cheese, Sour Cream, Lemon Juice and a pinch of both salt and white pepper in bowl on low, until semi-smooth
Set aside (store in squeeze bottle if possible)
Toasted Baguette:
Slice Baguette in half
Drizzle each half with Olive Oil, Salt and Cracked Black Pepper
Grill or pan toast over medium-high heat until crust forms
Cut halves into 2-3" pieces
Tenderloin:
Drizzle Olive Oil (2 Teaspoons) over trimmed Beef Tenderloin
Season Beef Tenderloin with Salt, Pepper and Coriander
Sear all sides on a hot skillet (med-high) to create a crust, approx 2-3 mins on each side for med-rare temp
Remove Tenderloin from heat and allow to rest (approx 5 mins)
Slice thin, on the bias
Construction:
Place sliced Tenderloin on Baguette Slices
Top with Balsamic Onions
Drizzle with Cabrales Crema
Garnish with Chiffonade of Fresh Basil
