An annual movie-themed Winefest with dinner by the bite from the area's finest independent restaurants, samplings from select wineries, and a unique silent auction benefiting Tampa Theatre's artistic and educational programs and ongoing restoration.

Recipes from Mangroves Soho!

Recipe for Volcano roll-

1- Nori sheet

6 oz- Sushi rice (cooked and cooled)

3 oz- Sushi grade #1 tuna

2 spears asparagus (blanched)

2 oz- cream cheese

Thinly sliced avocado

Line nori sheet with rice in a thin, even layer. Place tuna, cream cheese and asparagus in center and roll into a tube. Top with avocado slices and slice into eight pieces. Top with volcano mix.

Volcano mix- Cook for 3-5 min until fish is cooked through. op with green onions.

2 oz scallop

2 oz shrimp

2 oz grouper

2 oz japanese mayonnaise

1 T sri racha sauce

1 T Kimchee base

 

Bronzed Grouper-

8oz- Grouper

2 oz Blackening spice

Dust grouper with blackening spice and place in lightly oiled HOT pan.

 

Jambalaya rice-

6 oz- rice

3 oz -shrimp

3 oz -lobster tail meat

4 oz- tomato puree

4 oz -water

2 oz- andouille sausage

1 T- shallot (minced)

1 T- red pepper (diced)

1 T- celery (minced)

1 T garlic (minced)

salt&pepper to taste

Sautee last 5 ingredients until soft. Add uncooked rice and sautee for 2 minutes. add tomato puree and water. Cook rice over low heat for 15 min or so until rice is cooked. Add shrimp and lobster and cook for 3 minutes or until they are cooked through.

 

Creole Meuniere butter sauce-

1 T --shallot (minced)

1 t -garlic (minced)

1 T -capers

1 t -hot sauce

1 T - tomatoes (chopped)

2 oz white wine

2 oz -cold butter

Sautee first 5 ingredients over medium heat. Add white wine and cook for 30 seconds. Add cold butter and stir until butter is incorporated but not broken. Sauce should have a creamy texture.
